Air Canada showcased their #CoolNotCold destinations which they fly to around the world with a Poutinerie pop-up in Shoreditch. Bubble Food worked with Air Canada to create a bespoke menu that showcased their destinations through the classic Canadian national dish of chips, cheese and gravy, presenting different versions. Inspired by the airlines global flight routes, some of the dishes we created like the Hawaiian Loco Moco Poutine Poke was made up of fries, seared salmon, boiled egg, scallion, crispy pineapple and sesame ginger miso mayo, alongside vegan option, Cancun’s Mayan Enchilada, made up of sweet potato fries, corn chips, red enchilada sauce and avocado cilantro dressing. Our Executive Head Chef Jens Nisson created Poutine dishes with a twist from Air Canada’s global destinations with a visionary style.
